You did the hard part, drying the batch right. Storage is where people quietly undo it, bagging jerky warm or leaving it open to the air. A handful of steps keep every strip as good as the hour it came off the tray, and one of them, conditioning, is the cheap insurance most home makers skip.
Everything here serves the same two goals from the shelf-life guide: keep moisture low and keep oxygen out. Do that and a batch lasts; miss either and the fat turns or mould finds a foothold. Start with the routine, then we’ll get into containers, oxygen absorbers and the one safety caveat that genuinely matters.
The five steps
Cool it completely
Bag warm jerky and the trapped steam becomes condensation, the fast track to mould. Let strips cool to room temperature on the rack, an hour or so, before anything touches a container.
Condition for several days
Loosely pack the cooled jerky about two-thirds full in a jar and leave it, shaking daily, so any leftover moisture redistributes evenly and over-dried and under-dried pieces even out. See condensation on the glass? It’s not dry enough, back to the dehydrator it goes.
Seal out air & moisture
Move to an airtight container or bag. Vacuum-sealing is best; a jar or zip bag with the air pressed out is fine short-term. Add a food-safe oxygen absorber for fully-dried jerky you’re keeping sealed.
Pick the right spot
Cool, dark and dry. A pantry for a month or so, the fridge for longer, the freezer for up to a year. Heat and light age jerky and turn its fat faster, so the back of a cupboard beats a sunny counter.
Portion before you store
Split big batches into meal-size packs so you only open what you’ll eat. Every time you open the main stash you let air back in and reset the clock on the rest.
Cool, condition, seal. In that order.
Conditioning, the step worth its time
Conditioning is the one professional habit that catches problems before they cost you a batch. The idea, borrowed straight from how extension services teach drying fruit and vegetables, is simple: after the jerky cools, pack it loosely in a jar about two-thirds full, seal it, and leave it several days, shaking or stirring daily. Any moisture still hiding in a thicker piece redistributes among the drier ones, so the whole batch settles to an even dryness.
The reason it matters is the free check it gives you. Iowa State Extension puts it plainly for dried foods: if you see “condensation on the lid or sides of the container,” the food isn’t dry enough, return it to the dryer and condition again; and if there’s “any sign of mould, discard the product.” Timeframes vary, Iowa State says 2–4 days, Utah State up to a week or two, so treat “several days, checking daily” as the rule. That jar is your last chance to catch an under-dried batch before it’s sealed away and forgotten.
Containers compared
There’s no single best container, only the right one for how long you’re storing and at what temperature.

Oxygen absorbers: sizing and the safety line
An oxygen absorber is a little sachet of iron that rusts, pulling the residual oxygen out of a sealed container so fat can’t oxidise and mould can’t take hold. They’re rated in cubic centimetres (cc) of oxygen they can absorb, and matching the cc to the container is the whole trick.

Prefer to calculate: residual air volume (container volume minus what the food fills) × 0.21 = cc of oxygen to absorb, since air is about 21% oxygen. Round up. Sizing figures are from food-storage suppliers, not a government standard.
The safety line is the part not to skip. Utah State Extension is explicit that foods should be below about 10% moisture before storing with absorbers, because “storing foods with high moisture content in reduced oxygen packaging may result in botulism poisoning.” Jerky lives right at the moist edge of “dry” (a water activity up to 0.85), so oxygen-free storage is for jerky that’s genuinely, thoroughly dried, and even then the cautious home move is to keep sealed, oxygen-reduced jerky in the fridge or freezer rather than a warm cupboard for months.
Fridge vs freezer
Both buy you time; the freezer buys the most. In the fridge, cold slows fat oxidation and any lingering microbial activity, pushing a homemade batch well past its short room-temperature window, keep it sealed so it doesn’t take on moisture or odours. In the freezer, oxidation essentially stops, and vacuum-sealed jerky keeps up to a year. Because jerky is already dry, it thaws in minutes, so freezing a batch in meal-size packs costs you nothing in convenience.
Reviving over-dry jerky
Dried a batch past “chewy” into “jaw workout”? You can bring it back. Seal it in a jar with a slice of fresh bread for a few hours and moisture migrates from the bread to the jerky; or wrap a piece in a damp paper towel and microwave it briefly; or steam it for a few minutes. One caveat: adding moisture back undoes the very thing that made it shelf-stable, so treat revived jerky as perishable, eat it soon or keep it in the fridge, and don’t reseal it for the pantry.
Travel and everyday carry
For a pack or a glovebox, the enemies are heat, sun and repeated air exposure. Portion jerky into single-serving vacuum or heat-sealed packs so you open one at a time, and keep them out of direct heat and sunlight, which drive up the effective humidity inside a pack and speed the fat turning. A small food-safe silica-gel desiccant (a moisture absorber, not an oxygen absorber, given the botulism caveat above) helps in a humid day pack. Once a pack is open, it’s perishable, finish it within a few days.
