Well-made jerky is usually drier still, around 0.75–0.80. How to read a “best by” date
On a bag of jerky, the date is about quality, not safety. USDA’s Food Product Dating guidance states that, except for infant formula, “dates are not an indicator of the product’s safety and are not required by Federal law,” and that food “not exhibiting signs of spoilage should be wholesome” beyond the printed date.
