There’s no single magic number, because drying time follows the meat, not the timer. But the window is tight and predictable once you fix the two things that decide it: how thick you sliced, and how hot you’re running. Nail those and everything else is just fine-tuning.

That’s worth saying plainly up front, because half the frustration with homemade jerky comes from treating a recipe’s “dry for 5 hours” as gospel. Your kitchen isn’t the recipe writer’s kitchen; your slices, your machine, and today’s humidity are all different. What moves the clock

Four things stretch or shrink the drying time, and once you can see them you can control them. None are complicated, they’re just the difference between a batch that finishes on schedule and one that’s still tacky at hour seven.

  1. Thickness

    The biggest lever by far. Every extra 1/8" adds hours, because the moisture has farther to travel out of the strip. Uniform slices finish together; uneven ones leave you picking done strips off a half-dry tray for the rest of the afternoon.

  2. Load & airflow

    Crowded trays trap the moisture the meat gives off and slow everything down. Lay strips in a single layer with space between them, and if your machine has hot or cold spots, rotate the trays once or twice through the run.

  3. Humidity & weather

    A damp kitchen or a rainy day genuinely adds drying time, the drier the air, the faster water leaves the meat. There’s no fixed clock that survives the seasons, which is exactly why the meat, not the timer, tells you when it’s done.

  4. Fat & marinade

    Any fat left on the strip slows drying and beads on the surface. Wet, sugary marinades take longer than dry rubs because that surface moisture has to go first, so always pat strips dry before they go on the tray.

The doneness test

This is the only test that actually matters, so trust it over any clock. Pull a strip, let it cool for a minute (warm jerky lies about its texture), then bend it. Done jerky cracks and shows white fibers at the fold but doesn’t break clean through. Too soft and bendy? Give it more time. Snaps in half? A little over, still perfectly good, just slice a hair thicker or pull earlier next batch. After it’s cool, condition it in a jar for a day to even out any last moisture before storing.

Temperature is the safety number, not time

Drying alone doesn’t make jerky safe, heat does. Take beef and venison to 160°F, poultry to 165°F, to clear the kill-step. If your dehydrator tops out lower, pre-heat the strips in a 275°F oven for 10 minutes first, then dry however long the meat needs. A long dry at too low a temperature is not a substitute for hitting the number.

How long does jerky take in a dehydrator?

For the classic 1/4" beef slice at 160°F, plan on 4-5 hours. Thinner cuts (1/8") can finish in 2-3 hours; thick 3/8" strips run 6-7. Those are windows, not promises, humidity, how full the trays are, and how much fat is left on all move the number. Doneness always beats the clock, so start checking about an hour early.

What temperature should I dehydrate jerky at?

160°F for beef and venison, 165°F for poultry. That clears the kill-step and dries at a sensible pace. If your dehydrator won’t reach 160°F, pre-heat the strips in a 275°F oven for 10 minutes first, then dry at whatever your machine holds. How do I know when jerky is done?

Why is my jerky taking so long to dry?

Usually one of four things: the slices are thicker than you think, the trays are overcrowded, the room is humid, or there’s fat and marinade moisture on the strips. Slice thinner and more evenly, space the strips out, and pat them dry before drying. If your dehydrator has no fan or thermostat, that will drag it out too.

Can I speed it up without ruining it?

Slice thinner, don’t crowd the trays, trim all fat, and pat marinade off first, those genuinely shorten the time. What doesn’t work is turning the heat way up: past 160-170°F you cook and case-harden the surface while the inside stays wet, which is both worse jerky and less safe.

Do I need to flip or rotate the strips?

Flipping isn’t essential on a machine with good airflow, but rotating the trays once or twice helps if yours dries unevenly (most stacked-tray units do). It’s a small habit that keeps the top and bottom trays finishing at the same time.
