What to compare
A sausage stuffer fills casings with seasoned ground meat. Capacity, control over the filling speed and cleaning are useful starting points when comparing models.
Vertical build and a base that stays put
Check how the base attaches to your counter. The machine needs to stay steady while you turn the handle and guide the casing.
Metal gears and a two-speed crank
Compare the gearing and replacement parts. On a two-speed model, follow the instructions for filling and retracting the piston rather than assuming both speeds are for stuffing.
Capacity that matches your batch
Choose capacity around the batch size you normally prepare. A larger cylinder reduces refills but takes more space and can be harder to handle.
Cleaning and disassembly
Check how the cylinder, piston and tubes come apart for cleaning. Meat can collect around seals and small fittings, so read the cleaning instructions before buying.
Grind before you stuff
You need to grind and mix the meat before using a stuffer. If you don’t have a grinder, consider that part of the setup as well.
Check that the stuffing tube fits your casing. The casing size chart explains the main types and sizes.
